Originally, this recipe was targeted more towards the peanut variety of butters and cookies… buuuuut, well, things don’t always go as planned and there just so happened not to be one ounce of peanut butter in this whole house (having a little sibling around with a peanut allergy makes the ol’ PB a delicacy around here) … as the day progressed the refrigerator being cleaned out led to the discovery of four (yes, four…there are 13 of us and these things go quickly) opened, less than half full Almond Butter jars. (I’m not sponsered…buuut, thanks Costco! *nudge nudge)
Philippians 4: 19 New International Version (NIV)
- 1 cup of your favorite nut butter (in this case almond)
- 1 cup sugar
- 1 egg
- Mix & Bake (@350° for 6min.)
They may still look a bit shiny and gooey, but, don’t let that scare you… they are done! Take them out and let them cool for about 10min. By this time they should have firmed up and are now a rich, creamy, delicious disk of happiness!
